| Beef Stew with Bacon, Onion & Sweet Potatoes 1 pound lean beef stew meat(1 inch chunks) 1 can (14 oz) beef broth 2 medium sweet potatoes, peeled & cut into 2 inch chunks 1 large onion (chopped) 2 slices thick cut bacon (diced) 1 tsp salt 1/4 tsp freshly ground black pepper 2 tbls corn starch Hint: If you prefer, substitute carrots or white potatoes instead of sweet potatoes Coat slow-cooker with cooking spray combine all ingredients, except corn starch, in slow-cooker mix well cover and cook 7-8 hrs on low or 4-5 hrs on high or until meat and vegetables are tender with slotted spoon, transfer beef and vegetables to serving bowl turn slow-cooker to high combine corn starch with 2 tbls of water, mix well stir into juices cover and cook 15 minutes or until thickened spoon sauce over beef and vegetables and serve. This is a new recipe. It's really really YUMMY!!! |


| Barbecue Beef 3 pounds of boneless chuck roast 1 1/2 cups ketchup 2 tbls Dijon style mustard 1/4 cup brown sugar 1/4 cup red wine vinegar 2 tbls Worcestershire Sauce 1 tsp liquid smoke flavoring 1/2 tsp salt 1/4 tsp pepper 1/4 tsp garlic powder Place roast in crock pot combine remaining ingredients in mixing bowl pour sauce mixture over roast cover and cook on low 8-10 hrs remove roast from crock pot and shred meat place shredded meat back in crock pot stir to evenly coat with sauce serve on sandwich buns This one is Autumn's very most favorite! |
| Beef Hash 2-3 cups cooked beef (I use stew meat) 2 packages, 10 oz each, frozen hash brown potatoes 1 onion finely chopped 1/4 cup butter or margarine melted 1 cup of gravy or beef broth salt and pepper to taste Place all ingredients in crock pot cover and cook on low for 6-8 hrs or high 2-3 hrs double this recipe for a bigger crock pot Terri asked for this one alot...LOL..she asked me to marry her when she tasted it! |


| Asparagus Casserole 2 packages, 10 oz each, frozen Asparagus spears (thawed) 1 can condensed cream of celery soup 1 can condensed cream of chicken soup 2 cups crushed saltine crackers 1 cup cubed processed American cheese 1 egg In large bowl, combine all ingredients and mix well pour into lightly greased crock pot cover and cook on high for 3-3 1/2 hrs (cooking time is exact!) after cooking, dish may be held on low for up to 2 hrs Paula's daughter Hailey, just loves this one! |




| Cheesecake Cream Dip 1 package 8 oz cream cheese softened 1 jar 7 oz marshmallow cream Mix cream cheese and marshmallow cream until well blended Refrigerate for an hour or until chilled Serve with fruit, poundcake or cookies (we use strawberries or cantaloupe) My friends call this the fruit-dip. It is asked for a lot in the summer! |


| Fire Roasted Slow Cooker Chili (Serve this at your next Fiesta) 1 1/2 pounds of ground beef 1 large onion (chopped) 2- 15 oz cans black beans (drained) 2- 14 1/2 oz cans diced tomatoes with green chiles 1 cup Chipotle sauce or salsa 1 tbls chili powder 2 tbls chopped fresh cilantro Place ground beef and onions in 10 inch skillet cook over medium-high heat stirring occasionally until beef is brown(7-10 minutes) drain off liquid place in slow-cooker add all remaining chili ingredients cover and cook on low heat setting 6-8 hrs high-heat setting 3-4 hrs. To serve spoon chili into individual serving bowls, top with sour cream and shredded cheese if desired. Donna asked for this one and it's a favorite on a chilly day. |

| Best Baked Beans 5 slices of bacon, crisply fried and crumbled 2 cans, 16 oz each, baked beans(drained) 1 small green pepper (seeded & chopped) small onion (chopped) 1 1/2 tsp mustard 1/2 cup ketchup 1/2 cup hickory smoked barbecue sauce 1/2 cup brown sugar Mix all ingredients in crock pot cover and cook on low 8-12 hrs or on high 3-4 hrs Yum! Yum!..If I were you, I would throw in some Jalepenos for kick. |
| Southern Banana Pudding (my friend, Belle, should like this one!) 1 1/3 cups sugar pinch of salt 3 1/2 tbls of all purpose flour 3 eggs separated 3 cups milk 12 oz package Vanilla Wafers 3-4 bananas 1/4 plus 2 tbls of sugar 1 tsp vanilla extract Blend sugar, salt and flour in heavy sauce pan Beat egg yolks, combine egg yolks with milk, mixing well stir into dry ingredients cook over medium heat (stirring constantly until smooth and thick) remove from heat stir in 1 tsp vanilla layer 1/3 wafers in 3 quart baking dish slice bananas and layer over wafers pour a third of custard over bananas repeat the layers twice. Beat egg whites with electric mixer until foamy gradually add 1/4 cup plus 2 tbls sugar one tbls at a time, beating until stiff peaks form add 1 tsp vanilla and beat until blended Spread meringue over custard, sealing to edge of dish Bake in 325 oven for 25-30 minutes until meringue is golden brown This one is a must around my house during the holidays.James never let me cheat and use box pudding! |

| Pumpkin Gooey Buttercake Cake 1 package butter cake mix 1 egg 8 tsp butter(melted) Filling 1 -8 oz package cream cheese (softened) 1 - 15 oz can pumpkin 3 eggs 1 tsp vanilla 8 tbls butter (melted) 1 - 16 oz box powdered sugar 1 tsp cinnamon 1 tsp nutmeg Preheat oven to 350 To make the Cake: combine all the ingredients and mix well with electric mixture Pat the mixture into the bottom of a lightly greased 13 inch baking pan To make the Filling: in a large bowl beat the cream cheese and pumpkin until smooth add the eggs, vanilla and butter and beat together add the powdered sugar, cinnamon and nutmeg and mix well spread mixture over cake batter and bake for 40-50 minutes make sure not to over bake as the center should be a little gooey Serve with fresh whipped cream These are Paula's comments: After you make the crust, there is no need for another bowl, just use the same one.This is a yummy recipe and I don't even like Pumpkin Pie. Rachel's comments: Paula brings this every holiday, I eat too much of it and I don't even like Pumpkin Pie either! |
